So what are we producing? Who do we supply it to and what do we do with it? Here we have micrograms. Amaranths on the left and sunflowers on the right. We grow these in outdoor hydroponics and we've developed our own techniques for doing this on and the outdoor. We also do gourmet garnish and edible flowers, we do baby vegetables and we do a whole range of unusual things that no one's ever heard of, so I'm not going to tell you what they are as it to keep one secret. But really, we produce about 60 different varieties per season, and we've done about 120 different plant varieties over the year. Here we have Chef Liam on the left hand side is foraging at Agua and some of the trials are from the repitition kitchen in Perth. We're currently supplying 35 restaurants. Most of which are in the Perth CBD and we deliver to those on bicycles on an electric bike and then we do one day a week at the moment on Wednesdays. We do a car ride to about 8 restaurants as well.
