The other thing is something many people don't realise because gluten is a plant protein, it actually lowers your cholesterol. Did you know that? That's from some work at University of Toronto. It can be used in a cholesterol or in diet; and the the majority of us don't need to avoid it completely. There are people who must, for the reasons just. indicated what many people seem to be sensitive more so to is something that coexists with gluten in the same food; and you might have heard of the term fodmaps. Has anyone heard of Fodmaps? Can I just say so? Most people have the other carbohydrates that coexist in the same foods and what the research particularly from Monash Uni has found is that: that's usually the cause of the tummy upset. It's not the gluten, but they coexist in the same food and people have latched onto this gluten word and everyone thinks we should avoid gluten because it's a healthier diet. The problem is when you avoid gluten, most people don't make up that fibre deficit. And that changes your microbiome in a very negative way and staying on a low fodmap diet has been shown to decrease the microbiota diversity, which seems to be really harmful. Now, the other thing is with regards to the Mediterranean diet, and most other, I think virtually all diets associated with longevity, they are all high carbohydrate. None of them are high protein. But what's popular at the moment: High protein, low carb!
