Today I'm going to talk about an ancient structure called a yakchal, which was used for both the manufacture and storage of ice in desert regions in ancient times. Yakchal were commonly found across ancient Persia around 2,000 years ago. Remains of these structures have been found dating as far back as 400 BCE. They were built to last, and many appear to have been in constant use over several centuries. Yakchal were carefully designed and built, with three main components. A dome-shaped structure, the icehouse had a hole at the peak and a sunken interior where the ice was kept. Next to the structure was a long, high wall, known as a shade wall. and beyond this was a pool open to the air in which groundwater would collect. The shade wall allowed the water in the pool to cool to the point where it formed ice. Once this was thick enough, it was cut into blocks and stored inside the ice house where it was protected against the heat of the day. The material used to build both the ice house and the shade wall was a unique water-resistant mortar called Saruj. This was composed of sand, clay, egg white, lime, goat hair, and ash. The resulting material was resistant to heat transfer and completely impenetrable to water. Making ice in the desert sounds pretty much impossible. but the thickness of the ice house wall and separate shade wall offered a high degree of insulation. This meant that the Yakchal could reach incredibly low temperatures despite the desert heat. This by itself wasn't enough however. It was the arid desert climate that allowed the Yakchal to work. As the surrounding air was almost completely lacking in humidity, radiative cooling from the domed icehouse occurred, cooling the interior in a way that wouldn't have been possible if there had been any moisture in the environment. The evaporation of some of the water from the interior of the icehouse through the hole in the dome kept the interior cool. This, coupled with high winds, which removed the evaporated water efficiently from the surrounding area, meant that the temperature inside could drop below freezing. At the same time, the water in the pool outside froze. Many structures took advantage of the cold nighttime desert temperatures. The radiative cooling would continue in the darkness because the outside air was still very dry. But the mean temperature would drop, and this boost to refrigeration would allow the ice to persist inside the icehouse during the day. The ice itself also formed part of the cooling mechanism, providing water for the cooling process and acting on a similar principle to that found in a radiator designed to keep a modern house warm, except that here the principle was working the other way round to keep things cool. The low temperature inside the structure meant that goods could be stored there as well as ice, rather like in a modern-day refrigerator. A particular favourite of people at the time was sorbet, a dessert made from water, and this could be successfully stored in the structure. Interestingly, yakchal don't actually need to be as complex as they were in order to be effective. A simple shade over a sufficient amount of water will produce a cooling effect as the water evaporates into the dry surrounding air. But the yakchal reached an astonishing degree of sophistication and represented a significant driver in the expansion and success of the ancient Persian Empire. Many yakchal have deteriorated over the years due to widespread use of modern refrigeration methods, but some still survive. And interest in them has been revived because they offer interesting technological insights useful for anyone working on sustainable architecture. There may also be potential for low-energy housing this is something that needs further investigation.
